What is Modified Citrus Pectin?
Modified citrus pectin(MCP) is obtained from pectin. A high pectin content is mainly found in the peel and flesh of citrus fruits. When pectin is modified by treatment with a high pH value and high temperature, the result is modified citrus pectin. MCP is a complex, water-soluble polysaccharide, a polysaccharide[1].
