What is Now Foods Gluten Digest?
The BioCore®DPP IV contained in Now Foods Gluten Digest is a unique enzyme blend containing DPP IV (dipeptidyl peptidase IV), proteases and amylases.
DPPIV is a unique enzyme with specific activity to break down the characteristic proline bonds found in cereal proteins. Protease and amylase assist in the digestion of proteins and carbohydrates.
Now Foods Gluten Digest contains 30,000 active hemoglobin units (HUT) protease from Aspergillus oryzae, 500 dipeptidyl peptidase IV units (DPP-IV) protease from Aspergillus oryzae, 8.5 alkaline phosphatase (AP) from Aspergillus melleus, 12.000 dextrinization units of amylase from Aspergillus oryzae, 30,000 active haemoglobin units of protease from Aspergillus oryzae and 20 amyloglucosidase units (ADU) of glucoamylase from Aspergillus niger.
